Grandma’s Escarole & Beans …Scarola!

Some recipes aren’t fancy, expensive, or complicated. They’re simply nourishing. And this Italian escarole and white bean soup, or zuppa di scarola e fagioli, is one of those treasured recipes my grandmother made throughout the years.

I can still picture her standing at the stove with a big pot simmering away, turning a handful of humble ingredients into something that felt so comforting. Garlic gently sizzling in olive oil, escarole wilting down into the broth, and creamy white beans making every bowl hearty and satisfying. It was the kind of meal that stretched ingredients, fed everyone well, and never felt like a sacrifice.

This soup was proof that some of the best Italian cooking comes from simple pantry staples. A little olive oil, greens, beans, broth, and if she had one, a Parmesan rind tossed into the pot for extra richness. The aroma alone could fill the whole house and bring everyone into the kitchen.

We always loved it served with toasted crusty Italian bread to soak up every last drop of broth and a generous shower of grated Parmesan or Pecorino Romano on top. It’s warm, wholesome, and the kind of soup that makes you feel cared for from the inside out.

And just like Grandma always knew, it tastes even better the next day.
