Breaded Pork Chops Mom’s Style

Growing up, there were certain dinners that everyone looked forward to, and Mom’s breaded pork chops were right at the top of the list. The moment she pulled out the pork chops and started setting up the dredging station, we knew we were in for a great meal.

Just like chicken cutlet night, everyone had a job. One person cracked the eggs, another mixed the breadcrumbs with plenty of Pecorino Romano cheese, and someone else helped coat the pork chops. The kitchen counter would be covered with bowls, breadcrumbs, and a little bit of chaos, but those are the memories that make family recipes so special.

Mom always used bone-in pork chops because she said the bone added flavor and helped keep the meat juicy. She coated each chop generously in eggs and seasoned breadcrumbs mixed with cheese, then baked them until they were golden brown and crispy. Halfway through cooking, she would flip them so both sides developed that beautiful crunch.

The best pork chops were always the extra crispy ones. Mom knew exactly which pieces each of us wanted, and she’d leave a few in the oven just a little longer until they reached that perfect deep golden color. When they came out of the oven, the smell filled the whole house.

Before serving, she’d transfer the pork chops to paper towels and then to a wire rack to keep them crisp. A squeeze of fresh lemon, a shower of chopped Italian parsley, and a generous sprinkle of grated Pecorino Romano cheese were the finishing touches. Served alongside potatoes, salad, or vegetables, these pork chops were simple comfort food at its finest.

Every time I make them, I think about those evenings gathered around the kitchen counter, helping Mom at the dredging station and waiting impatiently for dinner to be ready.
