Buttered Baked Haddock

Growing up, there were certain dinners that everyone looked forward to, and Mom’s buttered haddock was always one of them. The moment she brought home fresh haddock fillets and started mixing the breadcrumb topping, we knew we were in for a delicious meal.
Just like many family dinners, everyone had a job. One person grated the Pecorino Romano cheese, another chopped the Italian parsley and garlic, and someone else helped prepare the baking dish. The kitchen counter would be covered with ingredients and a little bit of chaos, but those are the memories that make family recipes so special.
Mom always kept the recipe simple, letting the fresh fish shine. She topped each fillet with a mixture of seasoned breadcrumbs, grated Pecorino Romano cheese, garlic, and Italian parsley, then dotted the top with plenty of butter. As it baked, the topping turned golden brown and crispy while the fish stayed tender and flaky underneath.
The best pieces were always the ones with the crispiest topping. Mom knew exactly which portions each of us wanted, and she’d leave a few in the oven just a little longer until they reached that perfect golden color. When they came out of the oven, the smell filled the whole house.
Before serving, she’d finish the haddock with fresh lemon juice and a sprinkle of chopped Italian parsley. Served alongside potatoes, vegetables, or a simple salad, this dish was comfort food at its finest.
Every time I make it, I think about those evenings gathered around the kitchen counter, helping Mom prepare dinner and waiting impatiently for it to be ready.
