A Taste of My Mother’s Summer Table

Growing up, summer meals in our family were all about simple, fresh ingredients that came together beautifully. One dish that always appeared on my mother’s table was this Italian String Bean and Red Potato Salad. She would make a big bowl in the morning, letting the potatoes soak up the garlicky red wine vinegar dressing while the fresh basil filled the kitchen with its unmistakable aroma.

I can still remember my mom teaching me how to marinate the London broil, and I was so excited to help. As a kid, I felt like such a big girl standing next to her in the kitchen, learning the little secrets that made everything taste so incredible. She always told me that great food starts with simple ingredients and lots of love.

This salad is the definition of the fruits of your labor. Fresh string beans from the garden, beautiful red potatoes, fragrant basil, sweet onions, garlic, and good olive oil all came together to make one of the freshest dishes of the summer. Every bite tasted like sunshine.

My mother often served it alongside a juicy grilled London Broil that had been marinating all day, and to this day, I still can’t think of a better pairing. The bright, tangy salad perfectly complements the rich, flavorful steak.

One of my jobs every evening was setting the table before my father came home from work. As soon as he walked through the door from his business, he’d wash up, we’d all gather around the table, and dinner began. No matter how busy life was, we always ate together.

During the summer, eating outside was one of my favorite memories. My sisters and I couldn’t wait to sit around the patio table, laughing, eating, and enjoying the warm evenings together. Those backyard dinners seemed to last forever.

And then… we’d listen.
