Some recipes aren’t just food… they’re memories. And this minestrone soup is one of those for us.

My mom used to make this all the time, especially on days when the house needed a little extra warmth. The kitchen would slowly fill with the smell of garlic sizzling in olive oil, then onions, celery, and carrots softening together into something that already felt comforting before the soup even came together. We always knew it was going to be a “good soup day.”

There’s something about the way this simmers on the stove… the gentle bubbling, the steam rising, the anticipation of that first bowl. And without fail, we always served it the same way: big ladles of soup in deep bowls, a generous sprinkle of Pecorino Romano cheese, and thick slices of hard-crusted Italian bread with BUTTAH

Dipping that bread into the broth is honestly half the experience. It’s simple, hearty, and so comforting it feels like home in a bowl. Even now, just thinking about it brings back that cozy kitchen feeling, where everything slows down and everyone gathers without needing a reason.

And the best part? It always tastes even better the next day.
