The Lemon Chicken That Filled Our Home with Love

Some dinners have a way of staying with you forever, and my mother’s Chicken Francese is one of them.

I never had to ask what was cooking. The moment I walked through the front door, the bright aroma of fresh lemons, sizzling butter, and tender chicken filled the entire house. That incredible smell drifted into every room, and I knew one of my favorite dinners was waiting for us.

To this day, I still don’t know how my mother made her Chicken Francese so unbelievably tender. She would pound each cutlet just right, and somehow the fresh lemon, buttery sauce, and gentle cooking made every bite melt in your mouth. You hardly needed a knife. It was that tender. The delicate lemon butter sauce was rich without being heavy, and every bite was bursting with fresh, comforting flavor.

She never served Chicken Francese by itself. Right beside it was always a big bowl of spaghetti aglio e olio, simple pasta tossed with garlic and olive oil. The lemon butter sauce would find its way onto the pasta, making every bite even more delicious. And of course, there was always a loaf of fresh, crusty Italian bread on the table because nobody was about to leave that sauce behind. We soaked up every last drop.

Dinner wasn’t just about the food. It was about family. My parents, my sisters, and I would gather around the table, talking over one another, laughing, telling stories, and enjoying another beautiful meal together.

And if we were lucky enough to have leftovers, that was almost the best part. My sisters and I couldn’t wait to pack Chicken Francese in our lunch for school the next day. Somehow, it tasted just as amazing the next afternoon, and opening that lunchbox always reminded us of the wonderful dinner we had shared the night before.

Every time I smell fresh lemons, butter, and Italian parsley simmering together, I’m instantly transported back to my mother’s kitchen, where love was served with every meal and every recipe became another cherished family memory.
