Dad’s Eggplant Sicilian

There are some recipes that fill your stomach… and some that fill your heart.

My father and I made our Eggplant Sicilian together, and honestly, it turned into one of those memories I’ll never forget. He was singing, whistling, dancing around the kitchen while the garlic and onions were sizzling in the pan. Every few minutes he’d say, “Now THIS is cooking!” and we’d both laugh.

Meanwhile, my sisters Danielle and Joann were checking in on Mom and Dad like they always do. We are a close family, and every single day I thank God for them all. These are the moments that matter most, family, laughter, music in the kitchen, and recipes passed down with love.
