Our Family’s Friday Night Tradition

Growing up in an Italian family, Friday nights always meant one thing…

This wasn’t just pizza. It was a tradition that brought our family together every single week.

By late afternoon, the kitchen was already buzzing with excitement. My dad would tie on his apron, my grandmother would be standing at the counter, and before you knew it, everyone had a job to do. Someone was kneading the dough, someone was grating fresh Pecorino Romano cheese, someone was opening the anchovies, and someone else was sneaking a piece of fresh Italian bread into the sauce when they thought nobody was looking!

The smell was unbelievable.

Sweet onions slowly caramelizing in olive oil… garlic becoming fragrant… tomatoes gently simmering with oregano… it filled every room in the house. We didn’t even have to ask what was for dinner. We already knew.

As kids, we couldn’t stay out of the kitchen. We loved helping press the soft dough into the pan with our little fingertips, sprinkling the Pecorino Romano over the top, and watching my grandmother carefully place the anchovies across the pizza. She always told us not to worry if we didn’t think we’d like anchovies because once they baked into the sauce, they melted away and gave the pizza its incredible authentic Sicilian flavor.

While the pizza baked, Frank Sinatra or Dean Martin was always playing in the background. Everyone talked over each other, laughed, told stories, and somehow the kitchen became the happiest room in the house.

Then came the best part.

We’d all stand in front of the oven, watching the crust turn beautifully golden while the edges became perfectly crisp. The smell was almost impossible to resist.

As soon as it came out of the oven, someone always wanted to grab the first square before it had a chance to cool.

This isn’t the cheese-covered pizza most people think of today. Authentic Sicilian (ah-LEE-chee) is all about the light, airy crust, sweet onions, rich tomato sauce, Pecorino Romano cheese, oregano, olive oil, and those beautiful anchovies that create an incredible depth of flavor.

Every bite reminds me of my childhood, my grandparents, my parents, and all the Friday nights we spent together around the kitchen table.

Those evenings taught me something I’ll never forget…

Food isn’t just about feeding people.

It’s about slowing down, gathering together, sharing stories, making memories, and showing the people you love just how much they mean to you.

Today, every time I make this Sicilian pizza, I’m transported right back to that kitchen. I can still hear the laughter, smell the sauce simmering on the stove, and see my family gathered around the table.

And now, with all my heart, I’m honored to pass this beautiful Sicilian tradition on to you.
